Healthy oatmeal raisin cookie recipe with quick oats

 This is the best healthy oatmeal cookie recipe! Easy, low fat, and so delicious. I have been making these for years, and my family loves them.

 Honey - 300 gm Coconut oil / Butter - 200 gm (instead of coconut oil, you can use butter) Almond Milk - 100 ml Oats washed and Drained - 200 gm Muesli House (Dry Muesli) - 200 gm

Ingrients

White Wheat Flour - 250 gm Almond Flour - 250 gm Baking Soda - 11 gm Lemon Zest - 2 tsp Vanilla extract - 2 tsp Raisins - 200 gm Pistachio - 50 gm Chopped Apricot - 50 gm

Preheat the oven to 375 degrees F (190 degrees C). Grease a baking sheet with about 1 teaspoon of oil.

Wash and drain the oats in water and soak in the milk  7 Cream the butter and the Honey with the beater on 2nd speed. Do not aerate too much.

Add the oats, flour, and Bi-carb of soda, Lemon zest and vanilla. Scrap down the bowl.

Add the chopped apricots and nuts and raisin and fold under the mix. Do not over mix, to avoid squashing the apricots.

Use a spoon or your hands to form the dough into small balls. Bake at 190 degrees for 10-13 minutes or until cookies are golden brown and firm to the touch.
