Healthy oatmeal raisin cookie recipe with quick oats
This is the best healthy oatmeal cookie recipe! Easy, low fat, and so delicious. I have been making these for years, and my family loves them.
Honey - 300 gm
Coconut oil / Butter - 200 gm (instead of coconut oil, you can use butter)
Almond Milk - 100 ml
Oats washed and Drained - 200 gm
Muesli House (Dry Muesli) - 200 gm
Ingrients
White Wheat Flour - 250 gm
Almond Flour - 250 gm
Baking Soda - 11 gm
Lemon Zest - 2 tsp
Vanilla extract - 2 tsp
Raisins - 200 gm
Pistachio - 50 gm
Chopped Apricot - 50 gm
Preheat the oven to 375 degrees F (190 degrees C). Grease a baking sheet with about 1 teaspoon of oil.
Wash and drain the oats in water and soak in the milk 7 Cream the butter and the Honey with the beater on 2nd speed. Do not aerate too much.
Add the oats, flour, and Bi-carb of soda, Lemon zest and vanilla.
Scrap down the bowl.

Add the chopped apricots and nuts and raisin and fold under the mix.
